I am a bit sorry the Remus/Giles one breaks your heart, but, well, it's Remus and Giles, what can you do. :) I am delighted that you like all the others you mentioned also, and re: wanting all the Eleven/Master fic, um, there is lots and lots more where that came from. Have Amelia or I mentioned the Time War fic? Because there is a fic that is mostly in our brains at the moment about the Master escaping the Time War and finding Eleven &c &c. So that should get written at some point.
